Ingredients 
White prawns, trimmed and cleaned2kg
NONA TAMARIND (ASSAM) Juice 150ML
Dark Soy Sauce1 Tablespoon
Salt, Pepper, Sugar to taste  
Oil for frying 2 Tablespoons
Method 
1  Heat oil and fry prawns for 2-3 minutes. Remove from oil, marinate with salt, pepper and sugar and set aside for 15 minutes
2  Heat oil in wok until smoke rises slightly, add prawns and stir-fry for 1 minute, then add NONA Tamarind (Assam) Juice. Stir fry on high heat until liquid is almost dry.
3  Add dark soy sauce for colour. Add salt, pepper and sugar to taste if necessary.
4 Serve Hot
